A few years ago I had the opportunity to go to Canada for two weeks for an exchange project. The second week was mandatory and we had a fixed program, but we wanted to use the first week to see more of Canada. We stayed in the great city of Toronto for a week. A city where I could live too. Now a bowl of nachos is not a culinary masterpiece, apart from the fact that if you really make it good, you make so many people happy. For me it was an experience to remember. A very large bowl full of nachos, 4 types of cheese, minced meat and also guacamole. So soft and what a taste. The memories make me hungry again.
The guacamole sauce is originally from Mexico. It is also popular in California. That’s because lawyers, the main ingredient, are very cheap there. When you guess to yourself how expensive a lawyer is, you will soon find out whether it can be used as a cheap side dish or actually a delicacy.

The history of Guacamole can be traced back to the history of the avocados. Without one you don’t have the other. Avocados were growing in Mexico 10,000 years ago. Especially in South Central Mexico. The first recipe for the sauce was described in a book by William Dampier in 1697. He was present during a meal preparation by locals. Presumably, the recipe for this sauce is much older, but there is no further proof of this.

One person thinks it belongs with this dip sauce, the other thinks it is not possible. So you can make the choice yourself whether or not you want to use it in it. The same goes for lime.
When selecting the avocados, it is important that you choose the ripe one. Then it is very simple. You need a mortar and pestle or a bowl and a fork. The first step is to chop the onion and serrano pepper. Then add it with some salt to the mortar. If you also want to use the cilantro, now is the time to add it. Mix everything together until you get a nice substance. This will take 2 to 3 minutes.
Then you add the avocados. You have to remove the seeds beforehand and you can even cut the avocado to pieces. Also use the pestle and grind everything together. If you want a slightly thicker suspension, you will not have to use the pestle for too long. When you are satisfied with the substance it is time to add the tomato, but first you need to cut these into small cubes. When you have made the small cubes you can add them. This time you don’t use the pestle, but the spoon to put everything together. If you don’t have a mortar and pestle at home, you can also use a bowl and a fork. The principle remains the same.
