Today a new sauce recipe. The last sauce recipes I described where: Tomato Sauce, Hollandaise and Velouté. The three sauces are part of the 5 Mother of Sauces. Today I’m going to explain a sauce that is easy to make. This sauce goes perfectly with Chicken Shawarma. I am of course talking about the garlic sauce. In this article, we’ll take a closer look at how to make Garlic sauce.
What is the definition of Garlic Sauce
The meaning of Garlic Sauce is:
”The name says it all, it’s an sauce with the main ingredient of Garlic. It’s finely diced an combined with other ingredients such as oil”.
Garlic Sauce
Garlic is the main ingredient. The taste of the sauce can vary based on the ingredients. It’s possible that you ever tasted this sauce with a sharp taste. This depends on how much garlic is used. When you have a sharp sauce, you can add yogurt. This will cause the sharp to go off slightly.
The first thing you need to do is peeling the garlic. After that it’s time for cutting the garlic into small pieces. You can do this with a knife or food processor. The food processor is the easiest way and I highly recommended this. After grinding the garlic, add the salt and mix everything together well. When the garlic is finely chopped, you can choose from three emulsions:
- Oil
- Butter
- Mayonnaise
You can ultimately decide for yourself how you make the sauce. For this recipe we are going to use oil. The recipe may also be named Toum. I will explain this name further below. It’s time to add the oil to the food processor. It’s important to add the oil very slowly. Just relax and do this slowly. When you have added half of the oil, open the food processor and make sure that the remaining edges are also included to the sauce. Then continue adding the oil. This entire process will take about 10 to 12 minutes. Finally, add the lemon juice and mix it together for 4 minutes. The sauce will be creamy and have a great flavor! You can actually use the sauce with many dishes like fish, but also meat and chicken.
Toum sauce
You may have heard of Salsat Toum or Toumya. These two names are Arabic for Garlic Sauce. The word Toum means garlic. This recipe is an original toum recipe. So we don’t choose to use mayonnaise, but just vegetable oil. In addition, garlic, salt and lemon juice will be used. There is also an option in Lebanon where they add mint to the recipe. In Arab countries, this sauce is often served as a dip, with chicken and sandwich dishes.

- Food Processor
Ingredients
- 130 grams Garlic
- 118 ml Lemon Juice
- 700 ml Sunflower Oil
- 10 grams Salt
Instructions
- The first thing to do is peel the garlic.
- Add the peeled garlic to the food processor and add the salt.
- Start mincing the garlic and salt for 2 minutes. After 1 minute scrape down the sides of the food processor.
- After the 2 minutes it's time to add the oil. Pour slowly the oil in the mixture. It will take around 10 minutes for adding all the oil, scraping the sides of the bowl and for the mixture of garlic and oil to combine.
- After the 10 minutes you can start adding the lemon juice. Just like the oil, take it easy. This will also take around the 10 minutes.
- When the sauce is done you can transfer the sauce to a small bowl or put it in the fridge with foil on top. Enjoy this amazing sauce!
