This year a vacation was not an option due to circumstances, but when you are on vacation you make memories for life. These can either be positive or negative memories. This time a positive memory! During my first ski holiday in Italy, I drank hot chocolate milk every day for a week in combination with the dish that I will explain today: Apple Strudel. I am really a fan of cinnamon in combination with warm apples and raisins and Vanilla Bean Ice Cream. You may also think of winter with this dish, but you could actually eat this dessert every day! In this article, we’ll take a closer look at how to make Apple Strudel!

What is the definition of Apple Strudel

The meaning of Apple Strudel is:

”An typical Austrian dish consisting of dough, apple and raisins. This is eaten in combination with whipped cream, ice cream and vanilla sauce”.

So it is an Austrian dish that is mainly popular in Vienna. This dish was actually intended for people with little money, but later it was seen as a culinary masterpiece. This dish has many different names:

  • Appelstrudel (Netherlands)
  • Apfelstrudel (Germany)
  • Strudel di mele (Italy)
  • Strudel jablowky (Poland)
  • Studel de mere (Romania)
  • Jabolčni zavitek (Slovenia)
  • Almásrétes (Hungary)
  • savijaca sa jabukama (Croatia)

The history of the strudel goes back to the beginning of the 17th century. The first written recipe has been found during this time. This recipe was found in Rathaus. The dish started its popularity around the 18th century during the time of the Habsburge empire. It was during this time that Austrian cuisine was born. All the different cultures came together, including Hungarian and Turkish cuisine. In addition to this dish, Austrian cuisine is known for its Wiener Schnitzel and Kaiserschmarrn.

Apple Strudel Dough

For making Apple Strudel you actually have two choices: you choose the easy way or the slightly difficult way. Of course we are talking about making your own dough. You can choose to get dough from the supermarket, this also works fine and is the easy way. Or you choose to make the dough yourself. This is a bit more difficult and can go wrong, but this gives the best flavor. Below I will explain exactly how you can make this.

Apple Strudel Recipe

A Apple Strudel Recipe is really easy. You can divide it into two parts:

  • Dough
  • Filling

We start by making the dough. You will need the following ingredients for this:
flour, melted unsalted butter, salt and lukewarm water. Mix everything together in a kitchen machine until you get the dough. It will take between 1 and 2 minutes. When it is ready, let it rest at room temperature for 25 to 30 minutes.

Making the filling

When the dough is resting, you can start with the filling. This ensures that you can quickly mix the filling with the dough once it is all rolled out. You start by peeling the apples and cutting the apples into pieces. You can choose whether you want large or small pieces or a combination of both. The raisins are not combined with rum this time, it is a possibility! This time I let the raisins soak in hot water for 10 minutes. This makes them slightly softer. Of course it is also optional to add nuts. If you have a nut allergy, this recipe is perfect for you! I don’t use nuts! You add the raisins in a bowl with the apples, cinnamon, sugar, vanilla extract and lemon juice. Stir well.

It is now time to gently pull the dough apart. if the dough is too dry, it will tear, you want to prevent that of course. To do this as best as possible, you can take a tablecloth and sprinkle flour on it. Make sure the tablecloth is smooth. Put the dough down and start rolling the dough with a rolling pin. When the dough is thin, it’s time to start using your hands. Sprinkle flour on top of the dough. You can then pick up the dough and, like a pizza, gently use your fists to break it apart. A second possibility is to pick up the dough a little and put it further. The dough should be thin enough to see the tablecloth. Obviously, it shouldn’t tear.

Start Rolling

Slightly trim the edges of the dough so that you have a straight line. It is now time to cover the dough with melted butter. Do this very carefully as the dough is super thin. You put the filling at the beginning of the dough. You then use the tablecloth to lift the dough slightly and press it forward. Then gently fold the edges inwards and grease the top of the dough with butter each time. You repeat this process until you have formed a nice roll. Make sure to roll tight.

When you have a roll it is time to get a baking tray with parchment paper. Place the roll on the baking paper and cover it with an egg yolk. Preheat your oven to 180 degrees Celsius and place your Apple Strudel in the oven for 50 minutes to an hour. Every 10 minutes you take the strudel out of the oven and spread it with melted butter. You can choose to add some Vanilla Bean ice cream or whipped cream to the side and powdered sugar on top.

Before you eat the dessert let it cool a little bit! You can reheated the dessert in the oven for a couple of minutes! Enjoy this fantastic dessert!

  10. Every time you roll add the melted butter on top. You repeat the process until you have formed a nice roll. Make sure to roll tight.
  11. When the roll is done take a baking tray and add the parchment paper. Add the roll on the baking paper and cover it with egg yolk.
  12. Preheat the oven to 180 degrees celcius and place your Apple Strudel in the oven for 50 minutes to 60 minutes (golden brown).
  13. Every 10 minutes you take the Apple Strudel out of the oven and add the melted butter on the top and sides.
  14. After 50-60 minutes the Apple Strudel is done! You can add some Vanilla Bean Ice Cream or Whipping Cream on the side and Powdered Sugar on top! Enjoy this amazing dessert!
