This snack is a tradition that is often eaten during the Sinterklaas period in December. Actually throughout the month of December. It’s not that crazy, because it’s so tasty. It is also easy to make. If you think, I don’t feel like making this myself, a local baker will also have it if you live in the Netherlands or Belgium.

You can make the snack in 70 minutes. This gives you 30 minutes to let it cool down. I like this snack best when it is warm. You can of course also eat it cold, but that is not my preference!

Banketletter Recipe

This snack is easy to make. You need the follow ingredients: butter puff pastry, almond paste and egg.

This recipe is really easy to make. The first thing you need is puff pastry. I used butter puff pastry, but i’m not sure if you can buy that everywhere. I have used slices that I formed into a ball of dough.

The next step is rolling the dough into an elongated rectangle 54 cm long and 15 cm wide. Important is to make sure that the dough is about half an cm thin. Use 300 grams of almond paste. Roll of the almond paste in a 48 cm bar. It takes some time to form the paste.

Roll the almond paste bar into the butter puff pastry. Cut away the excess puff pastry. Fold the dough in at the ends. Fold the dough into a letter if you want, or just straight. Beat an egg and spread the egg over the dough. This will ensure the golden color.

Preheat the oven to 210℃ Celsius. Bake for 30 minutes on middle rack (210℃) Let it cool for 30 minutes. After 30 minutes the letter is ready to be served!
