Today a new snack recipe. A snack that is so good and typical Dutch that is often eaten in December. Every year we look forward to making this snack. You can also (depending on where you live) buy this at the bakery! In this article, we’ll take a closer look at how to make Amandelstaaf.

What is the definition of Amandelstaaf

The meaning of Amandelstaaf is:

”A snack that consist of puff pastry with almond paste inside. On top are almond flakes and some powdered sugar”.

This is a traditional Dutch Snack during the winter. In fact, this is the same as the banketletter. The difference is in the shape and the use of almond shavings on the top. A letter is often eaten in the Netherlands & Belgium during the Sinterklaas period. The bar can actually be eaten throughout December, as it does not contain a classic letter. I prefer to eat the snack warm.

Amandelstaaf Recipe

This snack is easy to make. You need the follow ingredients: almond paste, eggs, lemon, (butter) puff pastry, toasted sliced almonds and powder sugar.

First add 300 grams of almond paste, half an egg and the zest of half a lemon in a mixing bowl. Mix everything together. Roll a bar of the almond paste. Let it dry for 10 minutes. I advice half an egg otherwise the almond paste will be to ”wet”. Use 200 grams of buttery puff pastry (6 slices). Lay the slices on top of each other so that they form a whole.

Roll the almond paste bar into the butter puff pastry. Cut away the excess puff pastry. Fold the dough in at the ends. Beat one egg in a tray. Spread a beaten egg over the bar. Add toasted flakes of almonds on top of the bar.

Preheat the oven to 200℃ celsius. Bake for 25 minutes on middle rack (200℃). Let the bar cool for 30 minutes. After 30 minutes add powdered sugar on top and the bar is ready to be served!
