An new wonderful day! The last recipes I have written were: Dutch Hutspot and the dessert Lemon Mug Cake. Sometimes you come a cross a recipe you want to try, just by the way it looks. Today is such a recipe. I came across this and wanted to make it myself, see if the hype about this dessert was really justified! In this article, we’ll take a closer look at how to make Basque ‘Burnt’ Cheesecake.

Cheesecake has to be a great dessert. There are so many possibilities. Everyone has their favorite cheesecake. One of the advantages of a cheesecake is that it is easy to make. This is also the case with this Basque Cheesecake. As the name implies, this cheesecake is originally from the Basque Region. This is located in the north of Spain. Years ago I came across this on the internet for the first time. It is not an old dish yet. Thus it originated around the year 1990 in San Sebastian.
San Sebastian is a must visit place for true food lovers. When you are in San Sebastian city and you make an imaginary circle of 25 km around it, you will encounter 18 Michelin stars. Including 3 restaurants with 3 stars in San Sebastian. The Basques knows good food and so is this cheesecake.
The cheesecake is also called Basque Burnt Cheesecake. The top looks burnt. This is not a mistake, but this is done on purpose. This gives a great flavor to this dessert. You don’t need many ingredients to make this cheesecake. It consists of Cream Cheese, Sugar, Eggs, Cream and Flour. The cheesecake is a bit like the American Cheesecake. The difference here, however, is that the Basque Cheesecake has no crust, although it looks like it due to the color.

Basque Cheesecake Recipe
The Basque Cheesecake recipe is really easy. You need a couple of ingredients: Philadelphia Cream Cheese, Sugar, Egg Yolk, Eggs, Cake Flour and Fresh Cream.
The first thing you need to do is add 200 grams of Philadelphia Cream Cheese in a mixing bowl. Start mixing the cream cheese. After whisking the cream cheese you can add the 70 grams of sugar. Mix everything good together. You will notice that the mixture gets smooth.
The next step is adding and egg yolk. Like the previous steps mix everything together.
It’s time to grab a small bowl. Add 2 eggs and whisk them together. Add both eggs to the big bowl with the cream cheese. Mix the ingredients together. The next steps is to add the 115 grams of crème fraiche and 5 grams of cake flour. For the cake flour I use a sieve. When everything is mixed together it’s time to preheat the oven.
To get that nice burnt look on top of the cheesecake, the oven needs to be hot. Preheat the oven to 220 degrees celcius, that’s 428 Fahrenheit. Put the mixture in a baking pan with a diameter of 15 cm. I used a 19 cm baking pan, but the burnt cheesecake is than really low. I recommend to use 15 cm. When the oven is preheated add the cheesecake for 20-25 minutes. The top of the cheesecake needs to have a burnt look with cracks. After the cheesecake is done, let it cool for 30 minutes. After the cheesecake is cooled, you put it in the refrigerator overnight. The next day you can enjoy the amazing Basque Burnt Cheesecake.

- I recommend to use a 6 inch baking Pan (15 cm) for the best result. The Basque Cheesecake will be a lot higher, than the 19 cm baking pan I used.
