When you order make this dish or you order it in a restaurant you are lucky if you get it with a warm vanilla bean custard. The combination of the apples, the crumble and the custard and some ice cream is perfection. It’s time to briefly talk about the steps you need to make to get this wonderful dessert. Below are the steps:
- Peel 400 grams of apples and cut them in pieces.
- Put the apples in a baking pan over medium heat. Add 15 ml of water, cinnamon, 50 grams of caster sugar and 40 grams of raisins.
- Add lemon zest and mix everything. Let it cook for 10 minutes.
- To make the crumble add 70 grams of all purpose flour and 35 grams of unsalted butter to the mixing bowl. Mix everything by hand.
- Add 20 grams of caster sugar and almond flakes. The crumble is ready.
- Preheat the oven to 180 degrees Celsius.
- Add the apples to a glass baking dish. Add the crumble on top. Let it bake for 30 – 40 minutes.
- Make the Vanilla Bean Custard
- When the apple crumble is golden brown add the apples crumble to a bowl. Add two scoops of ice cream and warm vanilla bean custard. Enjoy!

- The next step is to make the vanilla bean custard. Put a saucepan on medium heat on the stove.
- Pour in the milk.
- Divide the vanilla pod in two and scrape out the black seeds. Put the seeds and the two half's in the saucepan. Bring to a boil!
- When the mixture is boiling, turn of the stove. Remove the vanilla pod. Grab a large mixing bowl and start whisking the 4 egg yolks with the sugar and cornflour.
- The color will change from dark orange to a light color. Add slowly the warm milk and whisk everything together. If you have added half of the milk you can pour everything back in the saucepan.
- Put the stove on low heat for 15-20 minutes. Keep on stirring. You will notice that the cream will become thicker!
- When the apple crumble is golden brown add the apple crumble to a bowl. Add two scoops of ice cream and warm vanilla bean custard. Enjoy!
