Summer is coming again, and the restaurants can finally open again after a crazy period. Everyone has suffered. I can’t wait to enjoy a nice piece of cake or another dessert on the terrace. It’s of course also easy to make it yourself, but it is also nice to eat a dessert by someone else. Today I am going to share a cheesecake recipe with you. I’m pretty sure you’ve never had this cheesecake before, but you want to! In this article, we’ll take a closer look at how to make Creme Brulee Cheesecake.

What is the definition of Creme Brulee Cheesecake

The meaning of Creme Brulee Cheesecake is:

”A sweet cake that consist of multiple layers. The top layer consist of caramelized sugar, the middle layer of a mixture of soft fresh cream, eggs and sugar. The bottom layer consist of a crust of crumbled biscuits”.

Creme Brulee Cheesecake

There are so many different types of cheesecake. Cheesecake is therefore a sweet cake that consists of several layers. Depending on the cheesecake, you have different flavors. The bottom layer often contains crumbled cookies/biscuits, which is combined with melted butter.

The middle layer has soft fresh cheese as the main ingredient. This can consist of cottage cheese, cream cheese or ricotta. This is often mixed with sugar and eggs. It also differs per cheesecake whether you have to bake it or just put it in the fridge. The main layer of this cheesecake is caramelized sugar. This gives the cheesecake the fantastic color. It is best to use a small gas burner for this! Make sure you put enough sugar on the top of the cheesecake! In this case, better too much than too little! It’s time to discuss the recipe!

Creme Brulee Cheesecake Recipe

This tart recipe is easy. You need the follow ingredients: digestive / bastogne biscuits, unsalted butter, eggs, cream cheese, granulated sugar, whipping cream, corn starch and vanilla extract.

The first thing you need to do is grab a kitchen machine, food processor or you can do it with a sealed bag. Add the digestive biscuits to your device and crush the cookies really fine. Grab a saucepan on medium heat and melt the butter. When the butter is melted you can add the butter and biscuits in a mixing bowl. When the butter is incorporate with the butter you can add this to the baking mold (21 cm). Spread everything even.

Start heading up the whipping cream. When it starts boiling take of the heat and let it cool until room temperature. Grab a mixing bowl and add the cream cheese with the sugar. Start mixing it together until you get a smooth batter. The next step is to add the corn starch and the 3 eggs. Again mix everything together. When the batter is again smooth you can add the vanilla extract and the fresh cream. Mix everything together.

Preheat the oven to 170 degrees celcius. Fill the mold with the mixture. When everything is in the mold you can cover it with aluminium foil. Place the mold onto a baking tray and add 2 cm of hot water to the baking tray. Bake the cheesecake for 50 minutes on 170 degrees celcius. After the 50 minutes let the cheesecake cool to room temperature. After that place it in the fridge for at least 4 hours. You can also use to cool the cheesecake overnight.

When the 4 hours are done you add a layer of sugar on top. Use a torch to caramelize the sugar. Make sure to use enough sugar. You are ready to slice an amazing piece of Creme Brulee Cheesecake. Enjoy! Below I have written the steps again in short steps.

How to make Creme Brulee Cheesecake

  2. Grind 90 grams of bastogne biscuits.
  3. Melt 50 grams of unsalted butter.
  4. Add the melted butter to the mixing bowl with the crushed cookies.
  5. Add the bastogne to the mold.
  6. Heat 300 ml of whipping cream. When it boils take of the heat and let it cool to room temperature.
  7. Next add 300 grams of cream cheese and 100 grams of granulated sugar to a mixing bowl. Mix the batter until smooth.
  8. Add 18 grams of corn starch and 3 eggs to the batter. Mix everything.
  9. Then add 15 ml of vanilla extract.
  10. Add the fresh cream to the batter. Mix everything.
  11. Preheat the oven to 170℃.
  12. Fill the mold with the mixture. Cover the mold with aluminium foil.
  13. Place the mold onto a baking tray. Add 2 cm of hot water to the baking tray.
  14. Bake the cake for 50 minutes (170℃)
  15. Let it cool to room temperature. Then place it in the fridge for 4 hours.
  16. Add a layer of sugar on top.
  17. Use a torch to caramelize the sugar. Enjoy this amazing cheesecake!
