This is a recipe I make myself every week. I make it on the weekends, so that I have a nice slice in the morning all week. You do need a few ingredients, but the recipe is so simple. Especially if you have a blender, you can finish making your batter within 10 minutes. In the meantime, preheat the oven and put it in.
You can put nuts on top of ”Gezonde Ontbijtkoek” (Dutch for Healthy Gingerbread Loaf). I like nuts very much so the top is full of nuts. You can choose whether you do a lot or little. After baking for 45 minutes, poke to see if the insides are already cooked. Because you use apple syrup, it is possible that something remains on the stick / fork. I personally don’t mind, since i like that moist texture more instead of dry. You can of course make the choice yourself.

Healthy Gingerbread Loaf Recipe
This breakfast recipe is so easy. You need the following ingredients: dates, almond milk, apple syrup, all purpose flour, almond flour, baking powder, biscuit spices, cinnamon, unsalted butter, nuts and salt.
The first thing you need to do is add 200 grams of dates, 250 ml of almond milk and 40 grams of apple syrup to a blender. Mix everything together. Add the mixture to a mixing bowl. The next step is to add 100 grams of all purpose flour to the same mixing bowl. Whisk everything together. By mixing it together you get a nice batter.
Add 50 grams of almond flour to the mixture. Mix everything together. Add another 150 grams of almond flour to the mixture together with a little bit of salt, 30 grams biscuit spices and 30 grams of cinnamon. Mix everything together.
Nuts on top of the Gingerbread Loaf
In the mean time preheat your oven to 160 degrees celcius. Add the baking paper and grease the 30 cm baking mold. Add on top 80 grams of nuts. If you want to add 40 or 60 grams, that’s also fine. Bake the Gingerbread loaf for 45 minutes on 160 degrees celcius. After the 45 minutes let it cool. The best thing is to eat your first slice a little bit warm! Enjoy this breakfast!
