Types of Glazing
The main ingredient of Glazing is powdered sugar. Powdered sugar is known to most people, but it is finely ground granulated sugar. By grinding this sugar, a texture in the form of powder is created. Powdered sugar has the ability to dissolve much faster. You often use powdered sugar to sweeten desserts or making icing. Glaze comes in two forms:
- Running Glaze
- Firm / Solid Glaze
Running glaze
If you want to make glazing that is ”running” you need to mix the powdered sugar with some warm water or some lemon juice. You use this icing to decorate cakes and cookies. When you put the glaze on the cake you will see clear stripes or strings.
Solid glaze
You can make the Firm glaze by whipping the egg white. This egg white need the thickness of a half-whipped meringue. If you have the half-whipped meringue, you can add the powdered sugar. You can use the icing to stay firm on a dessert, for example for Christmas Cookies!
