An amazing snack: Speculaas. An speculaas cookies recipe that is so popular in the Netherlands & Belgium. You need a couple of ingredients and wait a couple of days, but the result is so good!

  • Mixing Bowl
  • Speculaas mold
  • Plastic wrap

  • 225 grams Butter (Room temperature)
  • 300 grams light caster sugar (Yellow)
  • 5 grams Salt
  • 50 grams Buttermilk
  • 500 grams Zeeland Flour (or All Purpose Flour)
  • 20 grams Baking powder
  • 30 grams Speculaas spices

Optional spices

  • 3 grams Nutmeg
  • 3 grams Cardamom
  • 3 grams Ginger powder


  • The first step is to add 225 grams of butter, 300 grams of sugar, 5 grams of salt and 50 grams of buttermilk in a mixing bowl.
  • Mix the ingredients together.
  • Transfer the mixture to your working space. 
  • Add 500 grams of Zeeland flour (or all purpose flour), 20 grams of baking powder and the speculaas spices (and optional spices) to the mixture.
  • Start kneading the mixture with your hands until you can form a rod or ball.
  • Cover the ball with a plastic wrap and place it in the refrigerator for 2 days.
  • After 2 days get your dough out and spread some flour over the dough.
  • Roll the dough out until it reaches the right thickness for the speculaas mold.
  • Remove the excess dough of the mold.
  • Preheat your oven to 150 degrees celcius.
  • Place the cookies on baking tray.
  • When the oven reach 150 degrees celcius, add the baking tray and bake the cookies for 25 minutes.
  • After 25 minutes take the cookies out and let them cool completely. Enjoy!


Below some tips for making speculaas:
  • When you have made the dough, wrap it in a plastic wrap and place it in the fridge for 2 days.
  • It is best to form the dough on a speculaas mold to make the cookies.
  • If you don't have the opportunity to buy Zeeland flour, then all purpose flour is also good. You will notice that the flour is a bit drier, so you can add a few drops of water.
