  • 15 cm Baking Pan
  • Bowl
  • Whisk

  • 200 grams Philadelphia Cream Cheese
  • 70 grams Sugar
  • 1 Egg Yolk
  • 2 Egg
  • 5 grams Cake Flour
  • 115 grams Crème Fraiche

  • The first step is to add the 200 grams of Philadelphia Cream Cheese to a mixing bowl.
  • Next add 70 grams of sugar and mix everything until the mixture gets smooth.
  • After adding the sugar, add 1 egg yolk to the mixture and mix everything together.
  • Beat 2 eggs together before adding it to the mixture.
  • Add 115 grams of crème fraiche to the mixture and mix everything together
  • The next step is to add 5 grams of cake flour.
  • Preheat the oven to 220 degrees Celsius.
  • Put the mixture in a greased 15 cm baking pan. Bake the cake for 20-25 minutes or until the cheesecake looks brown and 'burnt'.
  • After baking let the cake cool for 30 minutes. When the cake has cooled, cool the cheese cake overnight.

  • I recommend to use a 6 inch baking Pan (15 cm) for the best result. The Basque Cheesecake will be a lot higher, than the 19 cm baking pan I used.
