4 Egg Yolks 225 ml Whole Milk 500 ml Whipping Cream 70 grams Sugar 1 Vanilla Pod 2 grams Salt
Start whipping your egg yolks with the sugar in a bowl. Grab a knife and cut the vanilla bean in half. Remove the seeds and add this to a saucepan on medium heat with whole milk, whipping cream and salt. Mix everything together. When the mixture is warm, mix a bit at the time with the egg yolks mixture. Keep mixing it together. After mixing, add everything back in the saucepan on low heat. If the substance thickens and it will not fall of your spoon, the mixture is ready. Let the mixture cool.Put the mixture in a bowl with foil on top and remove the vanilla bean halves. Put the bowl in the refrigerator for 12 hours. After 12 hours place the mixture in the ice cream machine. Follow the steps on the ice cream machine. Move the vanilla ice cream to an air tight container.Place the air tight container for a minimum of 4-6 hours in the freezer. After the 4-6 hours your Vanilla Bean Ice cream is ready to serve!
