What is the definition of Kruidnoten
The meaning of Kruidnoten is:
”A crispy semi-circular brittle cookie with gingerbread spices, that is eaten before and during the Sinterklaas party”.

You gotta love it: kruidnoten, also called pepernoten or peppernuts. Peppernoten en peppernuts have different forms and taste, but it’s often called for the same cookie. You know this cookie if you are living in the Netherlands (or Germany) or you have some roots in the Netherlands.
Kruidnoten are crispy semi-circular brittle cookies with gingerbread spices that are often eaten before and during the Sinterklaas party. According to the Dikke Van Dale, kruidnoot is a synonym of pepernoot. However, according to many bakers there is a clear difference.Pepernoten are irregularly shaped and are made according to the traditional recipe for chewy, anise-flavoured rye flour. Kruidnoten are part of the ”strooigoed”, which also includes meringues, gingerbread nuts and other small sweets. This is scattered or distributed in schools and elsewhere when Sinterklaas appears.

Kruidnoten Recipe
This snack is easy to make. You need the follow ingredients: self-raising flour, dark brown sugar, cold butter, cookie and gingerbread spices, milk and salt
The first step is to sieve 300 gram of self raising flour in a mixing bowl. When the self raising flour is in the mixing bowl you can add 150 grams of dark brown sugar. In the Netherlands we call it dark brown caster sugar, and 120 grams of cold unsalted butter. The next thing is to add ”speculaaskruiden” also called gingerbread spices. When all the ingredients are in the bowl, start mixing by hand.
You will notice that the dough is dry. Add 30 ml of milk little by little to the mixture and keep on kneading. Knead the dough to a ball. Wrap the dough ball in foil and let it rest in the fridge for a minimum of 30 minutes.
Grease the baking paper with sunflower oil. Make round balls of 10 grams each. If you want smaller balls you can make them 5 grams each. I recommend to make them between 4-5 grams. This has to do with baking them and the taste afterwards.
Preheat the oven to 180°C. Bake for 15 minutes (180°C). Let them cool for 30 minutes. After 30 minutes they are ready to be served.
