When I do go there, it can happen that I order Chicken Nuggets. After having tasted these for years, it was time to make them myself. It takes some time, but it’s really worth it! This snack is so popular, almost every major fast food chain is selling Chicken Nuggets. The most famous company is McDonalds with its own Mc Nuggets.
The chicken nugget was invented around 1950 by Robert C. Baker. He was a professor at Cornell University. Baker made the Nugget, then called Chicken Crispy with his associates. His recipe solved two major problems: being able to clump skinless ground beef and producing a batter that could be fried or frozen without coming off. These are the Chicken Nuggets we know today. In order not to expand further, below we will quickly proceed with the recipe.
Homemade Chicken Nuggets Recipe
This snack recipe is so easy. You need the following ingredients: chicken thighs fillet, salt, sugar, pepper, celery powder, baking powder, baking soda, eggs, corn starch, all purpose flour and water.
The first thing you need to do is cutting the chicken thighs fillet. I highly recommend to use a food processor. By using a food processor, the chicken will be ground finer and it is also time-saving. You can cut the chicken thighs into smaller pieces and then add them to the food processor. Then let it mix together. When you see that the texture looks like a paste, add the salt and sugar. Grind the chicken for a last time.
The next step is to shape the chicken nuggets. Use some water to make your hands a little bit wet. Grab a piece of chicken paste and shape it like a nugget. Put the nugget on a plate with parchment paper. After shaping the nuggets, let the rest in the fridge for 30 minutes.
While the nuggets are in the fridge, you can start with making the batter. The first batter is a thin batter. Add water and cornstarch in a bowl. Start mixing it together. The first batter is done.
The second bath is a flour bath. Add the all purpose flour, pepper, salt and celery powder in a second bowl. Mix everything together.
For the thick batter you add the all purpose flour, cornstarch, baking powder, baking soda, eggs and water in a bowl. Mix everything together. When all the three bowls are don, you can put a pan on the stove on medium heat. Add the oil to the pan.
Homemade Chicken Nuggets with Sweet Chili Sauce
When the oil is hot enough you can start making the chicken nuggets. First dip the chicken nuggets in the water / cornstarch bath. Then give the nuggets a flour bath and let it rest on a baking tray. When all the chicken nuggets are done you start with adding one nugget in the thick batter. Transfer the nugget to the pan with oil. The excess batter gives a nice crunchy layer. You will notice if the oil is hot enough when you are adding the nugget in the pan. Repeat this process for all the nuggets. The chicken nuggets are done when they are golden brown. Make sure to turn them a couple of times.
When they are done move them to a plate with kitchen paper to remove excess oil. You can serve these chicken nuggets with a sweet chili sauce on the side. Enjoy!

- For the thick batter add 104 grams of all purpose flour, 75 grams of corn starch, 4 grams of baking powder, 1 gram of baking soda, 240 ml of water and 2 eggs. Mix everything well.
- Everything is ready to make the chicken nuggets. First dip the chicken nuggets in the water/corn starch bath. Then give the chicken a flour bath and let it rest on a baking tray.
- Dip the chicken in the thick batter and fry the chicken nuggets golden brown.
- Place a small container with sweet chili sauce on the side. Enjoy your homemade chicken nuggets!
