I still remember it as yesterday. After we went to the dentist (with my mother and brother) it was time for something good. It was a treat every few weeks and I could really looking forward to: Ice Cream. We had always the choose of 3 scoops of ice cream. The first scoop was often ”Grandma’s cake ice cream” or we call it ”Oma’s Cake ijs”. The second scoop was always a flavor that I didn’t tried yet. The last scoop was a safe choice: Vanilla Ice cream. In this article, we’ll take a closer look at how to make vanilla bean ice cream.

To finish my story as an introduction. I made the safe choice of vanilla because it was so delicious. I really appreciate a good scoop of vanilla ice cream for dessert. After years of eating it in restaurants and ice cream shops, it was time to make it at home.

Earlier this year I already made the most amazing cinnamon ice cream. And I have to say you can’t make fast ice cream. You really have to take the time for it. The work you can deliver is minimal, because the ice machine does it’s job together with the fridge / freezer. The result of homemade Ice Cream is so good. Once you have made your own ice cream, you will notice that you don’t want anything else! It is therefore useful to make some extra!

Vanilla ice cream is the most accessible to everyone. Still, this is a recipe with Vanilla Bean instead of vanilla extract. In some recipes I use vanilla extract, but when I really want to have a pronounced vanilla flavor, such as with a custard or in this case ice cream, I always use a vanilla bean. A vanilla bean is pricey. Depending on where you live, but in the supermarket you can easily pay around $ 5. This price is really worth the bean. The taste is so much better, it really benefits the dessert.

With each recipe I indicate that you have to experiment. Use my recipe as a base, you can add new ingredients if you want to. Vanilla ice cream is delicious with fruit, but also with different sauces. For example, you could add pieces of cake so that you get Grandma’s Cake Ice Cream. Be creative!

Best Vanilla Bean Ice Cream

Why is this the best Vanilla Bean ice cream recipe:

  • Use of a real vanilla bean
  • Easy to make

A good ice cream recipe doesn’t have to be difficult to make. You only need a few ingredients for this recipe. Apart from the vanilla bean, which you probably have to buy in the store, you probably already have the rest of the ingredients at home. I really recommend using a real vanilla bean. You can of course also use vanilla extract, but this is not my preference. Then you don’t get the most out of the dessert.

For this recipe you need an ice cream maker. This will cost around the $100,- dollar. I know, its serious money. But like most equipment in the kitchen, you will buy this and can use it for a very long time! It’s a small investment for your Home chef career!

Making Vanilla Bean Ice Cream at Home

The first step of making ice cream is making a custard. Start by whipping your egg yolks together with the sugar in a bowl. Place a saucepan on medium heat on the stove. Put the whole milk, whipping cream, vanilla bean and salt in the saucepan. Cut the vanilla bean in half and remove all the seeds. Put the seeds in the saucepan followed by the two halves.
Keep stirring it until you see that the mixture is steaming. It doesn’t need to boil, it just need to be warm! Carefully pour the milk into the eggs. A little at a time and stir well. This is to ensure that the eggs are also brought up to temperature. When the milk is too hot, your eggs get scrambled. Of course we don’t want that.

Once you have added half of the milk and stirred well, the mixture can be returned to the saucepan. Turn the heat on low and keep stirring. Stir the mixture gently for a few minutes. The mixture is done if it no longer runs off the back of a spoon. Now let the mixture cool down. You can just leave the vanilla bean in it. That way it can still give off the flavor. Move the mixture to a bowl and remove the vanilla bean. Place foil over the top of the bowl and put it in the refrigerator for at least 12 hours.

After the 12 hours it is time to add the mixture to the ice machine. Follow the instructions of your ice cream maker. This can differ per ice machine. When the ice cream is ready, move it to a container and put it in the freezer for at least 4-6 hours. So it has time to harden. You can also choose to make it 8 or 9 hours. When the ice is hard you can serve it!

How to make Vanilla Bean Ice Cream

  1. Start whipping your egg yolks with the sugar in a bowl.
  2. Grab a knife and cut the vanilla bean in half. Remove the seeds and add this to a saucepan on medium heat with whole milk, whipping cream and salt.
  3. Mix everything together.
  4. When the mixture is warm, mix a bit at the time with the egg yolks mixture.
  5. Keep mixing it together. After mixing, add everything back in the saucepan on low heat.
  6. If the substance thickens and it will not fall of your spoon, the mixture is ready.
  7. Let the mixture cool.
  8. Put the mixture in a bowl with foil on top and remove the vanilla bean halves.
  9. Put the bowl in the refrigerator for 12 hours.
  10. After 12 hours place the mixture in the ice cream machine. Follow the steps on the ice cream machine.
  11. Move the vanilla ice cream to an air tight container.
  12. Place the air tight container for a minimum of 4-6 hours in the freezer.
  13. After the 4-6 hours your Vanilla Bean Ice cream is ready to serve!
