What is the definition of Coconut Mug Cake
The meaning of Coconut mug cake is:
”It’s a small coconut cake. You don’t use a cake mold but a mug. You only need a couple of ingredients, a mug and a microwave”.
Coconut Mug Cake
Not everyone is a fan of the Coconut flavor. Earlier I described a recipe on how to make Coconut Chocolate Bars. Just like a bounty, these have a real coconut flavor. If you don’t like this flavor then I don’t know if you’re going to like this mug cake. Coconut milk is used in combination with grated coconut. So that’s a lot of coconut flavor. I also use grated coconut as a topping.
But the way I look at it, if you are not a fan of the coconut flavor you might want to try. You can also omit the shredded coconut as a topping and replace it with vanilla bean ice cream. You can easily get the products at the supermarket. Then you need about 3 minutes of preparation to place the mug for 1 minute in the microwave. In my opinion, that is the perfect dessert: quick to make and delicious! I don’t use eggs for this recipe. If you do want to add eggs, this is of course possible!

Coconut Mug Cake Recipe
A Coconut Mug Cake Recipe is really easy. You only need 6 ingredients: all purpose flour, coconut milk, brown sugar, baking powder, vanilla extract and shredded coconut. First you start with grabbing a mug. I recommend to use a large mug. Larger than I used. The problem with a small mug is that it can spill over the edge. If you have a larger mug this will not happen. Once you have grabbed the mug, it is time to weigh the ingredients. When you have done this, first add the dry ingredients to the mug. This includes the flour, brown sugar and baking powder. Mix this well with a fork.
When everything is well mixed, add the wet ingredients to the mug. I’m talking about the vanilla extract and the coconut milk. Stir well. Then there is only one ingredient left. You add the shredded coconut and stir everything together again. If you really like the coconut flavor, you can add quite a bit of shredded coconut. If you are not a fan of the coconut flavor, you can add a little bit.
Put the mug in the microwave for 1 minute on 1000 watt. Just watch the top of the mug. If the top is still ”wet”, just put it in for another 20-30 seconds. After this you are ready to serve the Coconut Mug Cake. I served it with some shredded coconut on top, but you can add whatever you want like for example ice cream!

- Mix the dry ingredients together.
- The next step is to add the wet ingredients: 5 ml of vanilla extract and 44 ml of coconut milk.

- After mixing add the shredded coconut and mix everything together.
- Put the mug in the microwave for 1 minute (1000w)
- After 1 minute the Coconut Mug Cake is done. The last thing you need to do is add some shredded coconut on top.
